MANGO JAM WITH CUMARU
A jam that combines the delicious sweetness of Ubá mango with cumaru, the vanilla of the Amazon. From the fruits of the cumaru tree (*Dipteryx odorata*), a typical tree of the Amazon biome that can reach up to 30 meters in height, cumaru seeds are harvested, an ingredient known as Amazon vanilla. The collection is a traditional activity, representing an important income alternative for Indigenous peoples and traditional populations during the dry season when the fruits ripen. Cumaru management, carried out for generations by forest peoples, promotes the important task of monitoring the territory as groups traverse forest paths to collect seeds. Cumaru has been used as part of traditional medicine by forest peoples for generations. As an ingredient, it is highly valued by the cosmetics and pharmaceutical industries, as well as in gastronomy, for its flavor and aroma, with notes of vanilla, cinnamon, and chocolate.
