Cumaru
Cumaru From the fruits of the Cumaru tree (Dipteryx odorata), a typical tree of the Amazon biome that can reach up to 30 meters in height, cumaru seeds are harvested, an ingredient known as Amazon vanilla. The collection of cumaru for commercialization is carried out traditionally by Kayapó families with the support of the Kabu Institute. Cumaru management, carried out for generations by forest peoples, promotes the important task of monitoring the territory as groups traverse forest paths to collect seeds. Cumaru has been used as part of traditional medicine by forest peoples for generations. As an ingredient, it is highly valued by the cosmetics and pharmaceutical industries, as well as in gastronomy, for its flavor and aroma, with notes of vanilla, cinnamon, and chocolate.
